Easter baking doesn’t need to be complicated to feel special. For families with school-aged children, the magic is often in the mixing bowl moments – sticky fingers, chocolatey smiles and the proud presentation of something they helped create. If you’re looking for simple, crowd-pleasing ideas, these two recipes are perfect for a relaxed afternoon in the kitchen.

No-bake chocolate Easter nests

A classic for good reason, these require minimal ingredients, no oven time and plenty of opportunities for children to get involved.

Ingredients

  • 200g milk chocolate
  • 100g cornflakes (or crushed shredded wheat)
  • 2 tbsp golden syrup
  • Mini chocolate eggs

Method

  1. Gently melt the chocolate and golden syrup together in a heatproof bowl over a pan of simmering water (or in short bursts in the microwave, stirring frequently).
  2. Pour the cornflakes into a large bowl and carefully fold through the melted chocolate until evenly coated.
  3. Spoon the mixture into cupcake cases arranged in a muffin tin.
  4. Make a small dip in the centre of each nest and add 2–3 mini eggs.
  5. Chill in the fridge for around 1 hour until set.

Children can help measure, stir and spoon the mixture into cases. They’ll love counting out the eggs, and taste-testing, of course!

Carrot cake easter muffins

A lovely nod to the Easter bunny, these soft, gently spiced muffins feel seasonal without being fussy.

Ingredients

  • 150g self-raising flour
  • 100g light brown sugar
  • 1 tsp cinnamon
  • 100ml sunflower oil
  • 2 eggs
  • 150g grated carrot
  • 50g raisins (optional)

For the topping:

  • 150g cream cheese
  • 2 tbsp icing sugar

Method

  1. Preheat the oven to 180°C (160°C fan) and line a muffin tin with paper cases.
  2. In a large bowl, mix the flour, sugar and cinnamon.
  3. In a separate bowl, whisk together the oil and eggs.
  4. Combine the wet and dry ingredients, then fold in the grated carrot (and raisins if using).
  5. Spoon into cases and bake for 18–22 minutes until golden and springy to the touch. Cool completely.
  6. Mix the cream cheese and icing sugar, then spread or pipe onto the cooled muffins.

Children can grate the carrot (with supervision), crack eggs and decorate the tops. Add a few mini eggs or a light sprinkle of cinnamon for a festive finish.

Top tip!

Easter treats are about more than the final result. They’re about gathering around the table, sharing stories from the week and creating small traditions your children will remember long after the crumbs are cleared away.

Happy Easter baking!
