3 simple frozen treat recipes to serve at your summer fair

There’s nothing better than a refreshing frozen treat on a hot summer day! Here are three super easy recipes to help families cool down at your summer fair.

Frozen yoghurt bites

Makes 40

Ingredients

  • 500g tub of yoghurt (dairy, soy, coconut…whatever you like!)
  • 300g chopped fresh berries, such as strawberries or blueberries (optional)
  • Chocolate chips (optional)
  • Chopped nuts (optional)

Method

  1. You’ll need ice cube trays for this recipe. We highly recommend silicone trays as they’re much easier to work with.
  2. Spoon the yoghurt into the ice cube trays, leaving some space at the top for the fruit, chocolate and nuts (if using).
  3. Put them in the freezer. It’ll take around two hours to freeze, then you’re ready to pop each bite out and serve!

Banana ice cream

Makes 30

Ingredients

  • 15 ripe bananas
  • Whatever toppings you’d usually use for ice cream, such as sprinkles, dessert sauces, fruit, nuts and chocolate chips

Method

  1. Peel your ripe bananas, chop them up and place them in a container. Put them in the freezer for two hours or until frozen.
  2. Once frozen, put the bananas in a blender and blend until smooth. You might need a little milk to soften them up. You could also use a hand blender.
  3. And that’s it! A cheap and healthy alternative to soft serve ice cream.

Ice cream sandwiches

Makes 30

Ingredients

  • 30 servings of banana ice cream (see recipe above)
  • 700g light soft brown sugar
  • 560g granulated sugar
  • 625g butter
  • 5 eggs
  • 3 tbsp vanilla extract
  • 750g chocolate chips
  • 1,125g plain flour
  • 5 tbsp baking powder

Method

  1. Prepare your banana ice cream (see recipe above).
  2. Preheat your oven to 180°C/160°C Fan/​Gas 4. Line a couple of baking trays with parchment paper.
  3. In a bowl, mix the two types of sugar and butter together.
  4. Add in the eggs, vanilla extract and chocolate chips and mix.
  5. Sift in the flour and baking powder. Mix well until it forms a dough.
  6. Separate the dough into 60 pieces. Roll each piece into a ball and then flatten slightly on the lined baking trays.
  7. Bake for 20 minutes or until golden brown.
  8. Allow to cool completely before serving two cookies with the banana ice cream like a sandwich filling in the middle.
